Cook onion in dutch oven until fully cooked
Remove, drain on paper towels, and reserve bacon fat
measure bacon fat, and if less than 3 Tbsp, add Extra Virgin Olive Oil to make up 3 Tbsp
Return 1 Tbsp bacon fat to dutch oven
add onion, and saute until lightly browned
Remove onion and set aside
Remove any remaining bacon fat from dutch oven
Return 1 Tbsp bacon fat to dutch oven
add garlic, and saute until softened
Remove garlic and set aside
Remove any remaining bacon fat from dutch oven
Place gravy mix in medium bowl
add beef, toss to coat evenly
Return 1 Tbsp bacon fat to dutch oven
add beef, and brown on all sides
Remove beef and set aside
Remove any remaining bacon fat from dutch oven
Add vinegar and deglaze pan, scraping up any brown bits from bottom and sides of dutch oven
return bacon, onion, garlic, and beef to dutch oven
add potatoes, Cajun seasoning, Worcestershire sauce and water
Bring to a boil
Reduce to simmer and simmer 1 ½ to 2 hours, until meat is tender, stirring occasionally
